Blanc de Blanc
Warm and strong cheeses, appetizers, seafood, Asian food, poultry, dessert / fruit
Sparkling wine is one of the few types of Asian food wine that complement each other well. With a Blanc de Blanc, we suggest an Asian food with issues such as small sushi rolls for an appetizer and a chicken dish, like chicken skewers dukkah crust for the main course. Not only are fairly simple to do but they are cute too! When it comes to desserts, you can continue the Asian theme and make your own fortune cookies!
Blanc de Blanc Serve in a champagne flute, cold, between 43 and 48 degrees Fahrenheit.

Chicken Skewers with Dukkah crust
Dukkah makes everything better. This blend of spices, often including sesame seeds, sumac, and hazelnuts, is combined with oil and used as a dipping sauce. This recipe coats the chicken with mustard dukkah and then accompanied by a sweet sauce of honey and balsamic vinegar.
If you have time, you can make your own dukkah. Otherwise, can find it in gourmet grocery stores, or online at stores such as Spice Market.
Ingredients:
2 / 3 cup balsamic vinegar
1 / 3 cup honey
2 tablespoons Dijon mustard
1 / 4 cup olive oil
24 Chicken, also known as chicken fillets
1 cup Dukkah
1 / 4 cup Parmigiano-Reggiano cheese (1 ounce)
24 bamboo skewers or metal (if using bamboo skewers, soak in water for 30 minutes before cooking)
Getting There:
Heat oven to 350 degrees F and arrange rack in center.
Combine balsamic vinegar and honey in a small saucepan over medium heat. Simmer until reduced by half, about 10 minutes. Cool.
Combine mustard and olive oil in a shallow bowl and season well with salt and freshly black. Toss chicken in mustard mixture until well covered.
Combine dukkah Parmigiano-Reggiano and a source of wide, shallow and mix well. Roll each tender in the dukkah mixture until well covered.
Topics of chicken on each skewer. Place skewered chicken wire cooling racks. Nest of each rack in a baking tray and place in oven. Bake until meat is firm and dukkah crust is golden, about 25 to 30 minutes. Serve kabobs with sauce vinegar and honey.
Extra Dry Sparkling Wine

With extra dry sparkling wine keep it simple with a simple, yet delicious. Start with appetizers of crackers, cheese and sweet fruit. So for dinner we suggest pesto baked chicken parmesan a salad. For dessert back to the sweet fruit and chocolate, and another round of wine.
Serve sparkling wine in a glass of champagne, chilled between 43 and 48 degrees Fahrenheit.
Sample Recipe:
Baked Chicken Parmesan Pesto
Ingredients:
1 chicken, about 4 pounds, quartered or elsewhere chicken
4 tablespoons prepared pesto
4 cloves garlic, finely chopped
Juice of 1 lemon, 2 tablespoons
1 tablespoon olive oil
1 / 4 cup Parmesan cheese
Getting There:
Line a 13x9-inch pan with aluminum foil and lightly grease the foil.
Wash chicken and pat dry. Trim excess fat and skin, if desired. Sprinkle lightly with salt and pepper and place in prepared pan.
Combine pesto, garlic and lemon juice and rub the mixture evenly over chicken pieces. Cover tightly with foil and refrigerate for 1 to 2 hours.
Drizzle the chicken breasts with a little olive oil. Bake at 375 degrees for 55-65 minutes or until chicken is cooked. Juices run clear when chicken is pierced with a fork. Sprinkle with cheese Parmesan and continue baking just until melted, about 2 to 3 minutes.
Makes 4 servings.
